"Vallis polis cellae" means the "valley of many cellars" and this is a clear sign that wine making has ancient origins here. Ripasso Valpollicella is procuced by indigenous vines such as Corvine, Corvinone e Rondinella and it is subjected to a double fermentation. Later Ripasso Valpollicella is aged in French oak barrels. During this process the wine becomes more complex, the colour stabilises and the bouquet enriches. It can be sold only after two years from harvesting. La zona della Valpolicella è molto conosciuta per i vini rossi di grande personalità. “Vallis polis cellae” significa “valle dalle molte cantine” e questo è un chiaro segno che qui la produzione del vino ha origini antichissime. Il Ripasso Valpollicella è prodotto da vitigni autoctoni quali Corvine, Corvinone e Rondinella ed è sottoposto a doppia fermentazione. Successivamente il Ripasso Valpolicella viene affinato in botti di rovere francese. Durante questo processo il vino diventa più complesso, il colore si stabilizza e il bouquet si arricchisce. Può essere venduto solo dopo due anni dalla raccolta.
