Tauleto: the excellence of terroir Tauleto was born from Umberto Cesari's desire to create a wine with great structure, capable of expressing the excellence of its terroir and the great potential of the Sangiovese grape. In the late 1990s, after years of experimentation in the vineyard and in the cellar, Umberto Cesari found the "perfect recipe": Sangiovese Grosso and a small percentage of Uva Longanesi. Sangiovese Grosso, the noblest of the Sangioveses, thanks to small berries and thick skin, gives excellent tannins and excellent potential for aging, while the indigenous Uva Longanesi grape gives the wine great structure and a splendid deep ruby red color. The grapes from which Tauleto is produced grow on the estate of the same name, the flagship of the estate and the perfect place for the production of the highest quality grapes. The plot enjoys an enviable southwest exposure and for over 10 years has been the subject of experimentation by the Faculty of Agriculture of the University of Bologna, which has perfected its planting and cultivation techniques. In addition, the vineyard is characterized by a very special soil: it was once rich in superficial aquifers that, as they receded, left 30 centimeters of fertile humus. Hence the name Tauleto, which means "clayey, loamy soil." The average yield is kept very low to enhance the character of the varieties grown and capture the essence of the terroir. The wine's distinct minerality comes from the characteristics of the soil while the vanilla, spicy and balsamic notes come from the long aging in Allier barriques. Tauleto is the winery's cru, a wine produced only in the best vintages that expresses all the power and complexity of Sangiovese, combined with the style and personality of Umberto Cesari.
