Aperitifs and digestives
The digestivi is the ideal Italian way to end a meal, one that is introduced with the aperitivo, an often effervescent drink that "opens" the palate before a meal. Digestifs are bitters made by infusing grape brandy with a mixture of herbs, flowers, aromatic roots and barks, citrus peels and spices. Made in Italy boasts hundreds of varieties of bitters, aperitifs and digestives-each producer jealously guards its secret recipe, often handed down from generation to generation.
