Emporia Gin, created by Distilleria Caffo, is a premium Gin made with Phoenician Juniper, introduced by one of Italy's first producers starting in the 1950s in the South. They distill juniper berries and other natural ingredients in house. The use of these rare berries, originally wild in Calabria but grown in the company's own soils, imparts a delicate flavor. The unique infusion involves a large quantity of berries infused in fine neutral alcohol, distilled in a 1945 copper pot still by steam bain-marie method to extract the aromatic essence and remove distillation tails laden with less soluble oils. This meticulous process, guided by experienced Master Distillers, includes the addition of citrus peels and aromatic plants according to seasonal availability. After a year, spices and water from the Tyrrhenian Sea (part of the Mediterranean that bathes Calabria) are added. The blend is then redistilled to blend the botanical aromas with the Phoenician juniper base.
