It draws on a trio of grape varieties: pinot noir (30-40%) for body, pinot meunier (30-40%) for suppleness, and chardonnay (20-30%) for finesse. Of the final assemblage, 20-30% is specially selected from reserve wines to enhance the champagne's maturity, complexity and constancy. Following stainless-steel fermentation to protect again oxidation and preserve the original fruitiness, the wine spends 24 months in the cellars to reach optimum complexity.
