Prosecco Rosé DOC from Collalbrigo is the fruit of low-yielding vineyards located on hillsides formed by glacial movement in the Dolomites. On average, our vineyards are 25-30 years old and the soil is composed of clay and pebbles. After the harvest, which usually takes place in mid-September, the first fermentation of the wine is spontaneous and conducted with indigenous yeasts. The wine is then filtered using a centrifugal process. The second fermentation is initiated through the inoculation of selected yeasts. All wines from Collalbrigo Estate can be considered suitable for vegans, as we do not use any protein-based products at any stage of the winemaking process.
