Santa Margherita Sparkling Rosé combines in an intriguing and lively sparkling wine three different grape varieties, with different personalities and origins, from some of Italy's main premium wine-producing areas, where the winery has always operated: the Adige River Valley and eastern Veneto.
The cuvée is made by combining a white wine with a rosé wine produced through a short maceration of the red grapes with the skins. The second fermentation takes about a month in pressurized autoclaves at a controlled temperature of 15°C. Once the desired pressure of about 5.5 bar is reached, the wine is chilled to stop further fermentation and promote decanting, maturing on the lees in the autoclave for two to three months.
