St. Margaret's VIN 075 PROSECCO

Please note that the image shown may not be representative of the vintage indicated. The base wine is transferred to pressurized tanks for frothing; here it ferments for 18 to 20 days, with the help of selected yeasts, at controlled temperatures between 14 and 16 °C. Once the desired pressure (about 6 bar) is reached, the wine is cooled to -4 °C to stop fermentation and promote stabilization. It is then kept at a controlled temperature for at least a month to promote natural maturation in contact with the yeasts. At the end of this process, it is filtered and bottled isobarically.
