Santa Margherita Valdobbiadene PROSECCO 75ml

The base wine is placed in pressurized tanks for prise de mousse; it ferments in these for 18 to 20 days, with the help of selected yeasts, at controlled temperatures between 14 and 16°C. Once the desired pressure is reached (about 6 bar), the wine is cooled to -4°C to stop fermentation and promote stabilization.

It is then kept at a controlled temperature for at least one month to promote its natural maturation in contact with the yeasts. At the end of this process, the wine is filtered and bottled under isobaric conditions.
