Santa Margherita Sparkling Rosé brings together in an exciting and intriguing sparkling wine three different grape varieties, with different personalities and origins, from different premium wine-producing areas of Italy, where the winery has always operated: the Adige Valley and the eastern Veneto area. The cuvée is blended from a white wine base with a rosé wine made from a short maceration of the red grapes with the skins. Foaming lasts about a month in autoclaves at a controlled temperature of 15° C. Once the desired pressure of about 5.5 bar is reached, the wine is chilled to stop further fermentation and promote decanting, maturing on the lees in autoclaves. for two to three months.
