Cold cuts
The term cured meat (from salt) refers to food products made from pork, which can be either salted, seasoned, and cured, or minced and stuffed.
The cured meat is preserved in different ways, depending on whether it is raw, cooked, cured, or smoked.
Whole pieces (ham, coppa, shoulder, belly), or various minced and ground pieces, either raw (salami and sausage) or cooked (mortadella, frankfurter), can be used for the purpose, where pig's trotter and cotechino turn out to be two examples of raw meats to be cooked before consumption.
